This is a lovely lunch. It is balancing for Vata and Pitta doshas and can be tweaked for kapha dosha.

Kapha types use a spaghetti made from legumes, like lentil. When you make the pesto use a light sunflower oil, add a fresh chilli, and leave out the cheese!

PESTO INGREDIENTS

2 tightly packed cups of basil leaves

3/4 cup grated Parmesan cheese

1/2 cup olive oil

2 cloves garlic

1/2 cup sunflower seeds

Juice of 2 small lemons

METHOD

Put the sunflower seeds into the food processor and turn on for a minute or two. Add the other ingredients and process.

Cook some spaghetti, steam some green vegetables – I used courgette, chard and green beans. Serve with the pesto and some freshly chopped parsley. Vata use lots of the pesto, Pitta use a medium amount, Kapha use a little. You can mix this up and serve in bowls, or you can serve in separate dishes and let people help themselves, that way if you are preparing food for a family of different dosha types, you can serve the variations and people can help themselves.
