This is a simple SATTVIC supper. The soup balances Vata and Pitta doshas but can imbalance Kapha dosha (cashew nuts), you could replace the cashew nuts with some sunflower seeds. The grain bowl is very simple, freekeh and quinoa mixed with roasted beetroot and some soft, mild goats cheese. Vata can dress this with sesame or olive oil and a squeeze of lemon. Pitta could use olive or coconut oil and lime. Kapha could use sunflower oil and lemon.



3 medium carrots chopped

1/2 cup cashew nuts

3 cups stock

Rock salt

ground cardamom


Simmer the carrots and cashew nuts in the stock for 30 minutes then blend. Season with a little salt and ground cardamom.

For the grain bowl, roast sliced beetroot in a little ghee, cook up the grains and toss together with the cheese, dressing with a little oil and citrus for your dosha needs.
